Now I know these don't appear to be very Christmas-y but I figure since Jesus lay in a manger full of hay, these totally speak Christmas. And really, minus any green or red sprinkles, this is made of chocolate and chocolate screams Christmas. After all, this is the glorious time of year where we add a notch or two to our belts and stuff our faces full of unhealthy things.
So join me in celebrating with this wonderful chocolate dish. Besides, we really don't have to worry about getting fit until January 1st anyways.
Chocolate Peanut Butter Haystacks
1 lb. baker's chocolate
1/3 cup peanut butter
5 oz. container chow mein noodles
1 1/2 to 2 cups unsalted peanuts
Melt chocolate in a double boiler or in the microwave. If using the microwave, microwave in 30 second intervals, stirring in between each. Add peanut butter.
Stir until well blended. Add peanuts and noodles by handfuls or add most of the noodles and peanuts until almost full. The more nuts and noodles you add, the harder it will be to stir. Adding them handful by handful will be easier to stir but makes it harder to drain the chocolate off of the clusters.
Using two forks, scoop nuts and noodles out by small clusters onto a waxed paper lined baking sheet. If you would like to add marshmallows, add them to the top and drizzle chocolate over them to cover.
Let cool until hardened. Stick on a festive plate and enjoy!
