I love my garden.
Last late summer/fall we put in our first garden bed and had such great success that we added a second one and began gardening early this spring.
One of the things I planted was beets. Despite much success with everything else we've tried so far, sadly the beets didn't really take off. The greens looked fabulous but when I pulled them out of the ground the red part of the beets were puny. This is a photo of our largest one which was maybe 1/2 inch round.
Not really worth boiling.
I really didn't want the greens to go to waste so I made up a quick side dish with them using only 3 ingredients Hope you like it as much as my family (including 2 picky kids) did!
Sauteed Garlic Beet Greens
greens from 8-10 beets, red stem removed
2 Tbsp olive oil
1 Tbsp minced garlic
dash of salt
Pour olive oil in small skillet. Add garlic followed by beet greens.
Saute until greens begin to wilt, about 2 minutes. Sprinkle with salt.
Serve with your favorite main dish. I served it with some angel hair Parmesan noodles. Enjoy!
